Fancy a tasty and healthy snack? Then try this Healthy Rocky Road! You make it in no time and it's addictively delicious. Enjoy!

Ingredients

  • 60 gr cashew nuts
  • 2 scoops Ekopura smooth cacao
  • 3 sugar free cookies
  • 60 gr pistachios
  • 12 medjoul dates
  • Dark chocolate
  • 80 gr walnuts
  • 2 tbsp maple syrup
  • 3 tbsp raw cacao powder
  • 30 gr dried goji berries
  • 30 gr dried cranberries

How to make it.

  1. Briefly grind the cashew & pistachios in the food processor to make coarse pieces. Take this out and set aside in a bowl for a while.
  2. Put the walnuts and cookies in the food processor and grind finely. Then add the pitted dates, cocoa, vanilla, Ekopura protein and maple syrup and run until sticky.
  3. Finally, add the cashews, pistachios, goji berries and cranberries and mix in very briefly so it blends well with the date mixture.
  4. Line the baking tin with baking paper and put the mixture in it. Press it down very well. Put in the freezer for an hour so it becomes firm and you can cut it into cubes.
