Recipe for blueberry & banana protein pancakes

The ideal snack or breakfast!

A delicious recipe for healthy oatmeal and protein pancakes with banana and blueberry. The perfect snack or breakfast that is packed with great ingredients.

Ingredients

  • 2 Ripe bananas
  • 1 Scoop ultra fine oats (or regular oatmeal)
  • 1 Scoop of Ekopura vegan blueberry protein
  • 1/2 Teaspoon cinnamon powder
  • 1 Teaspoon baking powder
  • 1 Pinch of salt
  • 1/4 Cup sliced walnuts
  • 1 Tablespoon coconut oil


Instructions
Put the banana, oatmeal, cinnamon, baking powder, and salt in a blender and blend to a thick batter. If your batter is still very thin you can add more oatmeal until the batter is nice and thick.

Add the walnuts and other additions if you like. Blueberries, pecans and chocolate chips are our favorites.

Heat a medium skillet over medium-high heat and add some coconut oil to grease the pan.

Pour some batter into the pan to make small to medium-sized pancakes. Fry for about two minutes or until small bubbles begin to form and cook for two minutes (or until nicely golden brown) on the other side. The height of the heat is very important. If you have the heat too high your pancakes will burn, if you have the heat too low you won't get them nice and golden brown.

Repeat the above with the rest of the batter. You should be able to make 9 pancakes with this recipe.

Serve with your favorite toppings and enjoy!
