Healthy Breakfast Cheesecake Bowl

Today we share a recipe for this delicious Breakfast Cheesecake Bowl. Perfect as breakfast but also of course delicious as dessert. We are a fan!

Ingredients

4 Medjool Dadels, Pitted 1/4 cup of almonds 1/4 cup of walnuts 1/8 teaspoon cinnamon 1 cup raw cashew nuts 1 lemon, squeezed zest of a 1/2 lemon 2 spoons pure maple syrup 1/2 vanilla stick, scraped (or 1 / 2 teaspoon pure vanilla extract) 1 1/4 cup of greek yogurt 2 cups black currants 1 scoop Ekopura Vegan Protein Blueberry Optional: Organic raspberry sauce

How are you?

1. Put the dates, almonds and cinnamon into a food processor and pulse until the mixture looks like crumbs. (Crumb mixture). 2. Then put the cashew nuts, lemon juice, zest of the lemon, maple syrup, Ekopura, Vanilla, Greek yogurt and mix until it is a smooth whole. (Cashew mixture). 3. To make the Cheesecake BREAKFAST BOWL, first start with a layer of the crumb mixture and then a layer of the cashew mixture. Finish it with fresh black or blueberries. ENJOY!
