A banana bread without butter, sugar or gluten. It can be done and it is delicious too. With a few ingredients you put this delicious bread on the table. Delicious as breakfast or snack. Enjoy!

Recipe banana cake

  • 3 ripe bananas
  • 3 eggs
  • 2 tablespoons (almond) milk
  • 1 tablespoon honey (if you want something sweeter, use agave syrup)
  • 250 g buckwheat or almond flour (you can also use half-and-half)
  • 2 scoops Ekopura vegan protein vanilla
  • 2 teaspoons baking powder
  • pinch of salt

How to make it.

  1. Preheat the oven to 180 degrees Celsius.
  2. Mash the bananas in a bowl and add the eggs, milk and honey. Stir well.
  3. In a large batter bowl, mix the flour, Ekopura, baking powder and a pinch of salt.
  4. Add the banana-egg mixture to the flour and spoon in well with a spatula.
  5. Line a baking pan with baking paper and spoon the cake mixture into it.
  6. Place in the oven for 40-50 minutes. The cake is ready when a skewer comes out dry.
