Ingredients:
- 150g of your favorite nuts, seeds, kernels and fruits (such as walnuts, pecans, almonds, sunflower seeds, oat flakes, dried apricots, dates and cranberries)
- 2 tbsp coconut oil
- 2 tbsp honey
- 2 scoops Ekopura vegan or whey protein
- 1 pinch of salt
- 1 egg
- 2 tbsp raisins
- 2 tbsp water
Preparation
Mix the nuts, seeds and pits (no fruit yet!) in a bowl and add the coconut oil or olive oil, Ekopura and honey. Spread the mixture on the baking tray and bake for 20 minutes at 160 degrees. Toss in between to make sure all sides are nicely colored. Then put everything back into the bowl and stir until loose. Add the dried fruit and some honey, if necessary. Split the eggs and add the egg whites to the mixture. When the mixture starts to get a little sticky, you have added enough egg whites. Spoon the mixture into paper cake pans and bake the cookies in a preheated oven at 150 degrees. They will be ready after about 20 minutes.
