Ekopura No-Bake Peanut Butter Granola Protein Cups

We are mega fan of peanut butter. Therefore a recipe for delicious granola, peanut butter, protein and chocolate cups this week. This snack is super easy to make. It doesn't have to be in the oven and you need little ingredients. You can also easily combine with different toppings and different types of chocolate.

Ingredients

Cups:

  • 2 ½ cup of granola
  • 1 cup peanuts, cut / crumbled
  • ¼ cup peanut butter (we like to use organic peanut butter, but every peanut butter can)
  • ¼ head honey or agave syrup (or more if this is necessary to better hold the mixture together)

Topping:

  • 1 cup peanut butter
  • 2 tablespoons Ekopura protein powder (the natural or chocolate Tastes work best with this recipe)
  • 120 grams of Dark Chocolate chips (if you don't like dark chocolate, you can also use other types here)
  • 1 tablespoon coconut oil
Necessities:
  • Muffin molds.

Instructions:

  1. In a large bowl, mix the granola, peanuts, peanut butter and honey. Mix it well.
  2. Spread the muffin form with baking spray or oil.
  3. Divide the granola mixture over the different muffin forms. Use the back of a spoon to handle the mixture well into the shapes (tip: spray the back of the spoon with brick spray or oil so that the mixture does not stick to the spoon. Put for 5 to 10 minutes in the freezer to Harden out.
  4. Put 1 cup peanut butter in the microwave for 30-45 seconds or until it is hot and thin. Add the Ekopura Protein powder and stir very well. Fill every granola cup with the peanut butter and turn it again for 5-10 minutes in the freezer.
  5. Melt the chocolate chips and the coconut oil by doing them for 30 to 60 seconds in the microwave (or until it is a nice soft substance). Just stop every 15 seconds to stir the substance properly.
  6. Divide the melted chocolate over all Granola cups (if you want to add extra topping this is the moment. We love to do cut cherries on this cups) and place for about 5 minutes in the freezer (until the chocolate is hard) .
  7. Save in the fridge
